Cherry Blossom Jam

Cherry Blossom Jam

This recipe is guaranteed to make you feel like a magical fae being. The flavour is so delicate and fragrant, with floral notes and a mild cherry taste. Use as normal jam or mix in to lemonade for a gorgeous spring drink! It is incredibly easy to make so i would absolutely recommended giving it a try!

Ingredients

  • 2 cups of Japanese Cherry Blossom petals (pink, not white) with as much green stem removed as possible 
  • 1.5 cups of water
  • 2 cups of sugar 
  • A splash of lemon juice

You can also add other flower petals such as rose, or fruits such as strawberries if you wish!


Method

  1. Empty all the ingredients in to a heavy bottom pan and slowly bring to boil
  2. Allow to boil gently until it reaches a syrup consistency
  3. Add a drop of your jam on to a cold plate and if it sets to a jam consistency it is done!
  4. Pour in to a clean, sterilised jar, seal and allow to cool before eating. The jam will continue to thicken as it cools.
  5. Enjoy!

If you don’t enjoy your jam chunky, you can mash it with a potato masher before you pour it into jars, however be careful as it will be extremely hot and sticky! This should last up to 4 weeks in the fridge unopened.
